AT the end of winter we are rewarded with spring. At the end of summer, we are rewarded with peaches. There is nary a fruit finer than a fresh peach. I do not claim that this recipe will improve on the experience of eating a fresh peach. I do claim, however, that it is one of the best things ever.
This recipe is for 4 people.
4 fresh, ripe peaches Good quality vanilla ice cream — enough for 4 people 2 ounces of vanilla (you can also substitute brandy) 1/2 cup of brown Sugar
Peel and halve your peaches. Place them in a gallon sized zip-top bag along with the brown sugar and vanilla.
Slosh the mixture around trying to cover as much of the fruit as possible.
Let this sit for an hour or so. Mix it up and let it sit for another hour.
Get your grill really hot. I had mine at about 500° fahrenheit. You don’t want to cook the peaches. You want to char them, and heat them through—they should still be firm when you are done. To accomplish this, you need a ripping hot grill. Just before you place the peaches on the grill, dish the ice cream.
Brush a little oil onto the grill to prevent the peaches from sticking. Place your peaches on the grill for about 2–3 minutes per side.
Ideally, someone has dished some good vanilla ice cream. Place the hot peaches directly onto the ice cream.
