Kohlrabi is not your most common garden vegetable. It can be, however, one of the finest. I prefer it raw and fresh. Kohlrabi is high in vitamin C and potassium – as well as fiber. More nutrition information can be found here.
How to Enjoy
Select a good sized stem, about the size of a baseball. If they get too big, they get wood-like.
Peel with a vegetable peeler.
Slice and serve with salt.
Other Serving suggestions
Fresh kohlrabi can be eaten in a salad or cooked. I prefer it alone, with some salt. I was going to link to some other recipes using kohlrabi that I found around the web, but they all sounded terrible. I will just stick to raw, fresh, delicious kohlrabi.
